A simple and delicious soup with nutrient-rich beetroot.

 

Ingredient list

1 tbsp olive oil
1 chopped onion
250g potatoes
300g raw beetroot, diced
1.5 litres vegetable stock
bouquet garni
1 tbsp wine vinegar
1 tbsp lemon juice
black pepper
2 tbsp chopped parsley
salt

Preparation

Heat the oil in a saucepan, add the onion and potatoes, cook for 5 minutes.

Add the beetroot, vegetable stock, bouquet garni, vinegar and lemon juice. Bring to the boil and simmer for 40-50 minutes.

Sprinkle with parsley and season.
