Bubble and Squeak

Use up those leftovers from last night\'s dinner in a tasty breakfast omelette!

Ingredient list

2 tbsp olive oil
any leftover boiled or roast vegetables
eggs (1 or 2 per person)
salt and freshly ground black pepper

Preparation

Roughly chop up the vegetables.

Heat the oil in a frying pan, add the vegetables to the pan and fry gently until starting to brown.

Add the eggs, season generously and continue stirring till cooked through.

Notes

Traditionally, Bubble and Squeak is made with potato and cabbage, but the combinations are up to you and your own individual leftovers!
Obviously, if you are avoiding nightshades, legumes or on the Best Bet Diet, don\'t use these in this breakfast recipe. (But you probably wouldn\'t have leftovers of this group in the first place.)
