White fish with Colcannon

 

Description:

Magnesium-rich pollack, haddock or cod with a light version of colcannon - the traditional celtic potato dish.
 
 
Ingredients:

900g potatoes, scrubbed or peeled and chopped
2 cod steaks or fillets
1 large leek, finely sliced and rinsed
½ small green (or savoy) cabbage, finely shedded
2 cloves garlic, crushed
2 tbsp olive oil
freshly ground black pepper

 

 
Preparation:

Boil the potatoes until soft, and fry the leek, cabbage and garlic in a little oil until slightly browned.

Meanwhile, grill the cod on both sides until browning slightly.

When the potatoes are soft, mash with a dash of olive oil, and the fried leek, cabbage and garlic to make the colcannon.

Place a serving of colcannon in the centre of serving plates and position the grilled cod on top.

Grind black pepper over it and serve.


 

 
Notes:

Any firm white fish could be used for this dish... if you have a choice, check with your fishmonger which choice is most sustainable (probably not cod).
