Almond Orange Chocolate Cake

A sumptuous cake, ideal for celebrations. |

Ingredients:
1 orange
6 eggs or egg replacer* or flax gel**
180ml agarve syrup or 165g frucose (or 250g sugar if you are not avoiding it)
200g ground almonds
1tsp gluten-free baking powder
200g plain chocolate |

Preparation:
Wash the orange and boil it whole for 1 hour or until soft.
Heat the oven to 190?, and line and oil a 23cm cake tin.
Whisk the eggs (or replacer) and 'sugar' in a food processor, add the almonds and baking powder and pour mixture into a large mixing bowl.
Cut open the oranges and remove the seeds, put into the blender for 30 seconds. Add to egg and 'sugar' mixture.
Finely chop the chocolate in the food processor.
Add to rest of ingredients in the bowl and mix thoroughly.
Pour into cake tin and bake for 1 hour. Leave to cool before turning out. |

Notes:
I use organic oranges that have not been waxed.
Don't be daunted by the 2-hour preparation time, this is when things are boiling or baking and you can get on with something else.
* Egg replacer (available from supermarkets) contains soy protein, so it would not be suitable if you are avoiding legumes or on the Best Bet Diet.
** To make flax gel: in the place of one egg, mix 1 teaspoon of ground linseed / flaxseed with 3 teaspoons of warm water. Leave to stand for about 10 minutes, until it thickens, and add to your recipe.
Ground linseed / flaxseed or sprouted flax powder is highly nutritious, full of fibre and omega 3 fatty acids; it is suitable for people avoiding legumes or on the Best Bet Diet, and available from most supermarkets. |
