Ingredients:
1 tbsp olive oil
1 chopped onion
1 clove garlic
1 litre gluten-free vegetable stock
1 tsp French mustard
juice of ½ lemon
1 celeriac
2 carrots
2 potatoes
salt and pepper
parsley to garnish |

Preparation:
Heat the oil and add the chopped onion, cook for 5 minutes.
Add the chopped garlic, cook for another minute.
Add the stock, mustard and lemon juice and bring to the boil.
Add all the chopped vegetables and simmer for 35 minutes.
Season to taste.
Blend the soup and serve sprinkled with chopped parsley.
